Noodles with Shrimp and Bamboo Shoots 🍜

Ingredients (for 4 people):

  1. 400 g of rice noodles;

  2. 300 g of peeled shrimp;

  3. 1 onion;

  4. 200 g of canned bamboo shoots;

  5. 30 cl of pad thai sauce;

  6. 5 tablespoons of vegetable oil.


Preparation:

  1. Soak the noodles for 30 minutes in warm water. Drain. Pour boiling water over them;

  2. Stir for 1 minute and drain.

  3. Heat the oil over high heat in a wok. Cook the chopped onion and shrimp for 1 minute;

  4. Add the noodles and sauce. Cook for 5 to 10 minutes while stirring;

  5. Taste. Check the cooking. Off the heat, add the bamboo shoots;

  6. Serve with a squeeze of lemon juice and some chili powder. Enjoy your meal!

Ingredients (for 2 to 3 people):

  1. 100 g of transparent mung bean vermicelli;

  5. ⅓ bunch of cilantro;

  6. 4 tablespoons of vegetable oil;

  7. 1 pinch of pepper;


Preparation:

  1. Soak the vermicelli for 15 minutes in warm water. Remove the cilantro leaves and rinse them;

  2. Heat the oil in a pan. Add the eggs and let them cook for 2 minutes before scrambling them;

  3. Add the drained vermicelli and the sauce. Pepper to taste;

  4. Cook for 3 minutes before adding the pre-rinsed bamboo shoots;

  5. Mix, taste, and adjust seasoning if needed;

  6. Off the heat, add the cilantro. Enjoy your meal!
